Part of it might be to appeal to short attention spans. Most people aren’t going to sit and watch some guy talk through a couple of paragraphs, so instead each sentence is cut separately which makes it easier to hold their attention.
I also dislike the TikTok-style videos where the individual words pop up on the screen as they’re spoken. Similar thing there I think.
